Add all ingredients into a food processor; fix in the blade; pulse to combine well.
Pour the blended mixture into a large bowl; use your hands to work on mixture and mold into balls. Add additional flavors to taste. Add extra sweetener or lemon zest if desired.
Mold dough into medium-sized cookies; place on dehydrator sheets. Place in a dehydrator and dry cookies at 100°F (38°C) for 12 to 15 hours or until desired cookie state is achieved.
