Ingredients

  • 1 cup chia seeds
  • 2 cups water
  • 1/4 cup cocoa powder
  • 6 figs, chopped
  • 1 apple, peeled, cored and chopped
  • 1 cup walnuts, chopped
  • 3 Tbsp. honey
  • 3 Tbsp. cacao nibs

Instructions

  1. Soak chia seeds in 1/2cup of water for 30 minutes. Drain.
  2. Blend all remaining ingredients in a blender, except for cacao nibs. Add small amounts of water to achieve the right consistency.
  3. Stir together chia seeds, blended mixture and cacao nibs.
  4. Allow to rest for 20-25 minutes.
  5. Spread the mixture onto dehydrator tray. Dehydrate for 1 hour at 135°F. Cut into bars. Lower temperature to 110°F (43°C) and dehydrate another 8 hours. Flip bars and dehydrate another 8 hours.
